Oat & Raisin Energy Balls

When going to an event I always like to come with goodies! And this week I visited a local office to take them through a short exercise demo, and I wanted to create some new sweet treats which is where these little nuggets came from and safe to say they’re delicious. In this recipe I’ve used a food processor, but if you don’t have one then you could bash the nuts up in a bag and chop the raisins by hand. You might get a little sweat on, but they’ll be just as tasty. And don’t forget to tag me @oliviafurner when you get baking, I always love to see what you get up to in the kitchen. 

Ingredients (makes 10-12 balls) 

2 cups porridge oats
1/2 cup raisins
1 cup chopped walnuts
1 tsp cinnamon
1/2 cup peanut butter
1/2 cup maple syrup
1 tsp vanilla extract
1 tbsp ground flaxseed
1 tbsp chia seeds

Method 

  1. Add the walnuts and oats to a food processor, blend for 10-20 seconds or until they’re broken up but not flour.
  2. Now add the remaining ingredients, and blend again until everything is well combined.
  3. Using a tbsp measure, scoop 2 tbsp into the palm of your hands and roll into a smooth ball.
  4. Place in the fridge to firm up for 25/30 minutes, then tuck in!

Top Tip 

If you’re making a large batch, you can leave them in the freezer to keep for longer. Then just take them out when you’re ready.
